Mozzarella baked tomatoes! 1. Chop tomatoes horizontally 2. Place mozzarella (or whatever type of cheese), oregano, salt & pepper on top. 3. Drizzle olive oil on top 4. Bake for 15 mins on 450 degrees.
*For a lactose-free option, use goat cheese!
These go GREAT with GF crackers & cheese… preferably some white wine too!
